I don’t know about you, but these past few months during the whole quarantine- Grey's Anatomy, Netflix originals such as Riverdale, binge watching Tiger King & Too Hot to Handle, and fried foods are some of my guilty pleasures! I love to fry veggies like cauliflower, zucchini and sweet potatoes! The way I have fried veggies for years consists of, heating a pan with some 0 transfat vegetable oil then you toss your veggies right in to fry. While that method is delicious, I figured, maybe I should stop using so much oil and make the switch over to an air fryer! 😂 I took myself to Walmart, and bought a small Farberware Air Fryer just to check out what all the hype is about! Needless to say, I am in love with this new purchase! If you don't have an air fryer, you can do this SAME EXACT RECIPE in your oven, just preheat the oven to 425°F for the same amount of time, flipping once half way through.
2-4 Potatoes (I used Russet)
1/2 TSP Extra Virgin Olive Oil
1/2 TSP Smoked Paprika
1/2 TSP Himalayan Sea Salt
1/2 TSP Organic Pepper
Step One: Dice your potatoes, and toss in a bowl with olive oil and seasonings! Preheat your air fryer at 400°F for 5 mins.
Step Two: Use a spoon to move the potatoes into your air fryer in an even layer. Cook for 20-27 mins at 400°F. Step Three: Be sure to stop cooking the potatoes at 10 mins, take out the air fryer basket and shake up the potatoes! This way they don't stick to each other, and actually cook all the way through!
